Brunello di Montalcino is one of the major expressions of Italian enology. It is produced exclusively with Sangiovese grapes (named in Montalcino, "Brunello") according to the rules of a strict disciplinary that, in addition to setting yield limits per hectare, period of aging, characteristics of the product, establishes that before placing on the market, the wine is subjected to the examination of a special commission. After two weeks of spontaneous fermentation, the wine is racked into large French oak barrels where it ages for 38 months. It spends a further 6 months minimum period of refinement in bottle.

Tasting notes
Brunello di Montalcino Podere Brizio by Dievole has ruby red with garnet highlights. Opulent and intense on the nose, with nuances of ripe red fruit and intriguing herbal notes. Well-balanced on the palate with a lively acidity that lends vitality and freshness to a very elegant and complex wine. A hint of black pepper accompanies the finish.

Best to be enjoyed with
The best way to pair Brunello di Montalcino Podere Brizio by Dievole is with friends you love! It pairs well with Tuscan charcuterie, aged pecorino and meat dishes. Try it with Pici with wild boar ragout. It needs to be opened at least 2 hours before drinking. Pour the nectar into a crystal decanter.

The Winery: Dievole
The Dievole estate has a long standing history in Tuscany, dating back as far as 1090, a date which they proudly bare upon their logo. Among many improvements implemented, Dievole no longer use herbicides and pesticides (all vineyards are currently in Organic conversion), they swapped the use of cultured yeasts for wild, and they replaced all international varietals with exclusively indigenous varieties. This renovation has been paramount in helping Dievole rediscover its authenticity and individuality and has resulted in an elegant range which are territorially reflective and show great varietal purity.
