Like all Nebbiolo vineyards, vines are scrupulously grown and grapes are selected manually, both in the vineyards and in the cellar. The grapes, previously arranged in 18 kg cases, are transferred onto a conveyor belt and then undergo gentle de-stemming and pressing. The alcoholic fermentation and the maceration lasts for approximately 25 days at a constant temperature of 28°C. The malolactic fermentation follows in December. Ageing in 40Hl oak barrels - hectoliter French and Austrian oak barrels. Bottling takes place at the end of the summer, with a further six months of bottle ageing before release on the market.

Tasting notes
Barbaresco "Gallina" by Oddero is typically elegant with its refined bouquet and palate, and assertive tannins. Particular finesse in the bouquet, with balance and complexity, scents of ripe red fruit, roses, white pepper and violets. Mouthfilling tannins, excellent persistence on the palate. Firm structure great length. Attractive, tight fruit nose with savoury, minerally notes. Youthful on the palate too. Fantastic balance and plentiful while not going overboard with the fruit.

Best to be enjoyed with
Traditional pairings for Barbaresco "Gallina" by Oddero are rich meat-focused dishes like braised short ribs, beef roasts, lamb or veal chops. It needs to be opened at least 2 hours before drinking. Pour the nectar into a crystal decanter.

The Winery: Oddero
Poderi e Cantine Oddero is a historical brand among Barolo producers. The winery’s roots go back to the end of the 18th century when our ancestors began to make wine under their own name. The wine cellars, located in the frazione Santa Maria of La Morra, are raised up on a natural terrace and overlook the hills of the Langhe. Immersed in a sea of beautifully tended vineyards, our winery cultivates 35 hectares of the best cru of the Langhe and Asti territories to make some of Piedmont’s most renown wines: Barolo, Barbaresco, Nebbiolo, Dolcetto, Barbera and Moscato. Traditional knowledge and modern production techniques. Tenacity, patience, and respect for our territory and its raw materials.
