    Harvest is been carried out by hand towards the end of August. Each grape variety is vinified separately using native yeasts, in steel tanks at controlled temperature of between 30° and 33° C. The wine was transferred into barriques for malolactic fermentation. Assemblage of the three grape varieties takes place at the end of the malolactic fermentation. Afterwards the wine is transferred into oak barrique of which 22% are new, for approximately 12 months.

    Chianti Classico Gran Selezione “San Lorenzo” 2016 by Castello di Ama is definitely a wine that can be enjoyed on its own, with a simply cured meat or cheese board. It’s also a wine that pairs beautifully with spicy stews, and can take garlic and herb well. Cassoulet is a great option, or alternatively that classic Italian dish Lasagna.

    Chianti Classico Gran Selezione “San Lorenzo” 2016 by Castello di Ama is fruity forward with red cherry, strawberry notes, orange zest and a hint of liquorice. Some tertiary hints of leather. A juicy and succulent palate with a silky smooth texture. Tannins are structured yet delicate. The aftertaste expresses a lively freshness with notes of dark red fruits, wet ground and wood.

    The Winery: Castello di Ama
    Castello di Ama is in the historic heart of Chianti Classico, in central Tuscany, between the Florence and Siena provinces. Beauty and uniqueness enticed this family, originally from Rome, to Ama in the early Seventies. Bound by their love of wine, they replanted the vineyards and introduced new production methods, building a new winery with the end goal of producing Chianti Classico and returning Ama to its former glory.
