    Chianti Classico Ama 2019 by Castello di Ama (Italian Red Wine)

    Ama is produced almost entirely from Sangiovese grapes with a small percentage of Merlot, which are hand harvested. Fermentation occurs seperately in stainless steel with wild/natural yeasts, at controlled temperature between 30/32°. Manual pumpovers for 25 days. After the first racking, the wines are transferred back to steel tanks for malolactic fermentation. The Sangiovese and Merlot are blended after malo. The wine is then refined in second-passage oak barriques of thin grain, and finally bottled.

    The Winery: Castello di Ama
    Castello di Ama is in the historic heart of Chianti Classico, in central Tuscany, between the Florence and Siena provinces. Beauty and uniqueness enticed this family, originally from Rome, to Ama in the early Seventies. Bound by their love of wine, they replanted the vineyards and introduced new production methods, building a new winery with the end goal of producing Chianti Classico and returning Ama to its former glory.
