Vermouth Classico Del Professore is a vermouth produced in Lazio, a region in central Italy. The recipe and method for mixing the wine, alcohol and herbs and spices for this vermouth is highly intricate and complicated. The basis for the vermouth is a Moscato Bianco Langarolo wine to which a pure and meticulously refined alcohol is added along with about fifteen different aromatic and medicinal herbs gathered from alpine slopes surrounding Turin. The sugar added to the vermouth is minimally refined, natural cane sugar.
Vermouth Classico Del Professore has luxurious amber colour reminiscent of Marsala and the aromas on the nose fluctuate between hints of the liquorice and bitterness in absinthe, dried straw, mahogany and tea infusions. The medicinal quality in the flavour of the alcohol and its continual underlying bitterness manages to keep in balance with the refreshing flavours of herbs and spices, and is complemented by sweeter notes of ginger and citrus peel, making the Vermouth both slightly bitter and slightly sweet.
Best to be enjoyed with
Excellent as aperitif. Try it with light cheese canapé and olive tapenade.
The Winery: The Jerry Thomas Project
The Jerry Thomas Project is no ordinary producer, it is better known as Rome’s best speakeasy cocktail bar. Its recent partnership with Antica Distilleria Quaglia in a bid to start producing spirits as well as serving them, is a breath of fresh air. The Project is not just a tribute to the ‘father of American mixology’ Jeremiah Thomas, it is also a rediscovery of forgotten Italian spirits, a celebration of prohibition drinks with an Italian twist and an advocate for high quality products made with high quality raw Italian ingredients.
